Confusion on edge bevels

okay I’m sure this has prob been asked a bajillion times but I’ll ask again anyway lol. I think I’m getting confused with blade grinds and edge grinds. I haven’t attempted yet to make one of my own knives, but I’ve been really getting into sharpening. I’m wondering how many different types of cutting edges there are. Is it only flat and convex? Or is there also a concave (hollow) edge? I usually use power equipment to sharpen. I know how to get a flat edge and a convex edge. But I’m wondering how to get a hollow edge on my knife or if that’s even possible. When my grandpa passed away he left me his belt grinder which has a contact wheel on it and I’m wondering if I use this to sharpen will it give me a concave edge or will it just be flat like using the platen? Freehand sharpening produces convex edge anyways and mist tines its slight convex.You can vary degree of convex with your hand ,its simple just practice and theres many videos on Yt that explain how to do it.Most important thing is to apex the blade,get the burr and take it off.Once you get that everything else is easy!
 
I dont know how to get hollow edge either,belt sander is very useful for sharpening,practice on some cheap knives first,it will give you nice convex edge ,but if you dont have practice you can mess up the knife easily or ruin HT ,so learn slowly.With platten you can hollow grind the entire blade,but final edge in my opinion is best flat or slightly convex.Hollow cutting edge is something i havent seen yet,maybe on couple scalpel one time use blades but on a knife never.
 
Thanks for the replies guys. I guess an easier way to ask the question is if I use the wheel of the belt grinder will it still give me the same flat cutting edge as the platen does? Or will it hollow out my
Edge? I see a lot of belt grinder videos of people sharpening on the wheel and I’m wondering why they do that instead of just using the platen??
