Convexing a Tasman salt?

Can someone please explain to me the proper way to convex a H-1 Tasman salt with a mouse pad and sandpaper? I've been having some trouble getting the knife sharp with my ceramic rods and I would like to see if convexing the edge would help.

All I really need to know is what kind/what grit sandpaper I should get and some tips on taking the knife from dull to shaving sharp. Although any extra information on convex edges and how they are processed is quite welcomed :)

Simply use 60 grit to convert the edge type. Keep going until you raise a burr, then switch over to 220-320 for regular sharpening.
