at what grit should I start to be able to shave hair?

You can do it at nearly any grit but I'd say 400 would be a good baseline.

I'm at 400 and it feels like it'll just almost shave but not quite. I suppose I'll move up to 600 and if I can't get it there I will do some more research then start over.

Wish i could figure out how to convex sharpen, all i did was make the edge dull

Convexing is only marginally easier than working on stones. You still need to hold an angle properly, and you also need to have the right equipment and know how to use it.

Most folks start out with the old mousepad. If you are using something that soft, that is a problem. "Rock hard" felt is a terrific backing. Soft-ish leather works very well too.

There is still a learning curve. You won't be shaving anything at 400 grit until you are proficient with your equipment. It takes practice, just like anything else.

The Izula could shave hair at 600. This was my first time around.
