Corned Beef Hash, it's what's for dinner

I made some corned beef briscuit and froze it a couple months ago and decided today to make real corned beef hash and eggs for dinner.

slice corned beef, grate some red potatoes and get out enough eggs.

take grated red potatoes and make hash browns
heat up corned beef slices (cook until brown)
put hash browns on plate, layer with corned beef
cook one or two eggs over easy and top the potatoes and meat with this, add salt, pepper, and tobasco sauce for taste.

Brother-man, you need to add some onion and perhaps a bit of red bell pepper, and shred the corned beef a bit next time and you'll be golden!

Have you ever "corned" your own beef? Its some work, but was pretty fun when I did it. The results weren't any better than what you buy though, so I don't think I'll do it again.
 
Anaheims are better than red bells.

I'll be attending a crab feed for dinner tonight. :D
 
I love corned beef hash. Had some for breakfast/lunch (cuz brunch just sounds fruity) yesterday at Country Waffles. Hash browns, 3 scrambled eggs, rye toast, and a massive bowl of that white gravy. Gone in less than 5 minutes.
