I'm curious about this as well, but I would add "compared to 1095?" for reference.
My general experience about living in Hawaii is that, so long as the steel doesn't rust from exposure to air, it typically isn't an issue so long as you wipe your knives dry after use. Regrettably, although mirror polished 1095 doesn't rust from sitting in the air, White steel seems to go bad over time.
Organic material will form a patina on the carbon steel, dry wiping the blades after use is all needs to be done, 52100 ground thin and tempered right will out cut anything in my opinion
