coworker got a new knife

He brought it to work today, it's a crkt tissou? A tanto fixed blade, very hefty.

I'm guessing a line is 4 or 5 mm thick, and polish is decent, some scratch pattern visible. Edge is good too, nothing extreme. If it were mine it'd be polishing right now haha.

We did some cut tests with paper and water bottles, paper test wasn't good but ate water bottles with ease.
 
I think that is the Hisshou. If I'm not mistaken there are three fixed blades in that series. Longest to shortest - Hisshou (about 11-3/8" sharpened edge), Shinbu, and Sakimori. I like them. Designed by James Williams. Enjoy it! Mike

But it's a sushi restaurant.

And yes its hissou. I'm bad with details haha.
And it is sharp enough to cut sushi, just not cleanly.
 
Very classy choice for work.
This brings a whole new high to the meaning of the term "work knife".
