I narrowed down to 2 for next knife purchase for the great outdoors.

1. Entrek 11 bravo in CPM 541

2. Survive knives GSO 4.1 in Bohler M390

what would be the best steel of choice to use for the outdoors? ease of sharpening, toughness, not likely to chip.

I acutally prefer CPM-154 over M390. I find its a better balance of toughness, edge holding, and sharpenablity. Btw you do know you are comparing a 1/4 inch thick knife to one that is 5/32 of an inch thick. That Entrek is tougher than a tank but the Survive will cut better due to being almost half as thick.

I think a better comparison would be the Javaline vs the Survive as the Javalina is only 3/16 inch thick.
