This is a new Gyuto that just arrived in the mail today.
The knife maker is Mario Ingoglia from Gurnee, IL.
The blade steel is CPM154 and the handle stabilized Amboyna Burl and Bog Oak.
The blade length is about 10&1/2", the knife overall is 16" long.
I will be trying it out over the weekend.
On Monday it goes in the mail to my son inlaw as a late birthday present.
I also posted this in the Kitchen Cutlery subforum. Before I started getting good kitchen knives I had never looked there. I thought some of you who are not usually excited by kitchen knives might enjoy seeing this.
I think Mario did a great job on this knife. One thing that I am sure of is that I will be in touch with Mario again for at least one more kitchen knife.
