This is my first chef knife over 7 in and my first in 3V. Specs are 14.125 OAL with 9.25 blade 9 of which is actual cutting edge made from .160 thick material. Handle is Jade G10 with yellow fiber liners. This feels like the best cutting chef I have made to date. I have used O1 for several others and this one does seem to be the best slicer. The edge still needs to be thinner since it is about .015 behind the edge. Let's hear what you think.

Simple and functional design. I love it, very similar to the one I'm starting for my mom. O-1, 8 inch blade, more of less the same blade shape (a tad pointier) and a slightly more contoured handle... i really like your choice of handle material :thumbup:
 
how hard did you run the 3v
thinning the edge more will make it even better
i had thouhgt about makign a tester in 3v before since i love how the steel acts in other work i have made but i think i might have found a steel that might be better (still have not got much in the way of testing the new steel tho)

I am not yet set up for heat treating so Peters did the job with a cryo to 61.
I am going to shoot for about .008 behind the edge when finished.
I am very pleased in how this steel performs so far.
Can you share what your new steel is.
I thought I had a winner with K390 when I read the composition, but in my tests it does not outperform M4 by a lot.
