Better for what ? You pick the steel that best suits your needs.S30V was basically designed for blades and for most purposes is an excellent choice. 440V (now called S60V ) is a tool steel that is sometimes used for knives. The S60V has much higher carbon therefore is more brittle but has better wear resistance.

Overall I would choose S30V, because it is tougher and easier to sharpen and its edge holding is definitely good enough for me.

What's the CPM9V?? That shows to be a lot tougher and have a lot more wear resistance than S30V. It must rust quickly and be hard to sharpen or something.
