I got a case of crabs and I had to figure out what to do with them..... pretty damn quick.
A whole damn case! 35# to be exact!!
So, the assignment was for a newly formed civic enterprise group's public launch meeting.
They wanted me to develop a seafood product that would highlight:
- Louisbourg, the town
- Louisbourg Seafood ("Mira Bay" - the brand, soon launching internationally)
- Louisbourg seafood (the concept)
- High cuisine, something a cut above what's done 'round here now.
They wanted this:
- for 85-100 people
- plated and displayed for professional photography
- accompanied by scaled recipes
They wanted this in four days.
I thunk, and I thunk, and I thunk.... 'till I could thunk no more.
And then ah.... HAH!
Snow Crab. That alien looking creature. Those, particularly large and sweet, fished from the famous(honestly, famous for its high productivity) AREA #23, right off the shores of Louisbourg.
Made fresh daily here along the rugged shores of fog-shrouded, historic Louisbourg....blah, blah, blah...
All sorts of symbolism goin' on in this one.
I did a few different portion sizes and plating styles that were photographed for a promotional campaign, but I won't see those for quite a while.
Can anyone guess how I might have made the mayo taste and feel.... "foggy"....coastal, Nova Scotia fishing harbour - fffoooggg?
And, so was born:
