Crinkle finish question

Is it common practice to remove the crinkle finish as the blade is used and the finish starts to come off or be scuffed off from hard use?

Not really. I think people who don't like the coating take it off before use. People who don't care about the coating just use the blade until it comes off. Of course, if it's flaking off and you're prepping food then taking it off would be a good idea.

Coating usually comes off with a good paint stripper, leaving steel that is often uneven with pits or dimples. Some people go with that, some polish up to a finer finish.
 
I have a user coming. I wouldnt mind having the blade done in a satin finish once I wear a bit of finish off...heheheh
