I have the Cold Steel Bushman knife and was wondering if the black coating on it was safe for use in preparing food items. I have emailed CS with this question but have not been able to get a reply. I think it is an oxide coating.

Irreguardless of whether the black is paint or oxide, it should be safe for food prep as long as the color is not chipping off into the food.

I have an older bushman which is parkerized and a newer one which has a black painted coating of some sort. The coating is very durable and hasn't had any chipping issues.

The coating on mine (newer CS Bushman, black coated/painted blade) has not chipped, even after attacking an old, dead, dry lemon tree for about an hour. I punished the knife, and the coating merely rubs back, going to grey where it's gotten a bit thinner.
I wouldn't hesitate using it with food.
