Here is a set I have been working on. Thanks to a very patient customer.. I know these will be worth the wait!
OK, the specs.
Blades are san mai, 1095 High Carbon steel with HHH damascus cladding RC 61.
The paring knife is a scalpel and measures in with a OAL of approx 190mm and a blade length of approx 85mm tip to heel.
The Petty/utility knife measures 280mm OAL with a 155mm blade tip to heel. Blade height approx 41mm at the heel.
The Gyuto is a impressive 373mm OAL with a 248mm blade tip to heel. Blade height is approx 55mm at the heel
The Handles are a combination of Ebony and Stabilized birch. With custom spacers and stainless pins with single mosaics.
