I'm a huge knife nut but know very little about chef knives. My sister is just getting ready to finish up culinary school and I would like to get her something special, so I am wondering if someone could make a recommendation as to a couple custom chef knife makers that I could look into for a knife for her. The two that have already been linked are reasonable examples. Some can cost less handsome a LOT more. That $375 number is in the ballpark of what I would charge for an AEB-L gyuto with an exotic wood handle like this one. (bad picture, I know)
