Bill Bryant of Custom Cutlery contacted me when I was doing the same kind of search you're doing. He made me a custom fillet knife, with a 6.5" blade of "modified" 440A. It has a brass finger guard and maroon micarta scales. The workmanship is excellent. The steel takes a very sharp edge. It sharpens easily and cuts like crazy.

I finally got a chance to try it, by filleting a pile of yellow perch this fall. After doing about 50 of them, it was still sharp enough to shave hair from my arm. You might check out "Custom Cutlery" on the net and see what they've got. Good luck.

Hi M&M,
I offer to sizes and styles of custom made fillet knives. Both made from 440-C, S.S. You will find them on my web-site at, www.sunrisecustomknives.com
While your there visiting, besure and check out the "Field Testers" report section, were a few of my customers have written about their fillet knives, and how well they preformed.
