I've read various posts about people having their production knives customized with different liners, bolsters, handle inserts, etc. Where do you have these things done? Are these businesses with websites where a person could browse different options, how much they cost, etc.?

I'm buying a new edc, and have pretty much settled on a bm 710hs. I've seen multiple threads on bm knives as well talking about up to a 70% increase in edge performance with some resharpening and shaping. With my extremely limited experience (read none) in undertaking such an exercise, I wouldn't dare try such a thing myself. I'm sure I would end up with a $120 piece of dullness. Is there a person or business that someone could send their knife to for such a treatment (maybe the same place as the custom work inquired about above)?
 
I've had a used 710 for a short while and have only sharpened it once. The edge bevel seems to match the 40 degree rods on a sharpmaker and the blade thickness just beyond the edge bevel is relatively thick. You can "thin out" the blade at the shoulder where the edge bevel begins using the 30 degree rods on the Sharpmaker. I haven't done this on mine, but I've done it on other knives with "thick" edges and it is a simple way to increase cutting performance. If you get a Sharpmaker, this topic is covered in the video and instruction booklet. It's easy to do with a Sharpmaker, but I wouldn't think about trying it freehand. And trust me, if I can do it, so can you.

If you need a great slicer, I'd get a BM which slices better right out of the box, instead of trying to tweak the 710. I carry a BM 940 every day and it has better slicing geometry and is available in a variety of colors and blade shapes (if you consider the 941/942/943 variants) as well as a bunch of limited editions with different blades steels and handle materials.
