Hi folks -
I watched Vasilli's videos on sharpening, which spurred me to make a 15 degree angle honing block like he uses.
That has worked - although I am just short of whittling hair with it, I was able to get a "Super Chef" Taiwan made stainless steak knife "shaving sharp".
This is my practice knife, and now that I think I can get a good 30 degree edge using Vasilli's block method, now I will shoot for some whittling...
I made the block from a piece of 2x4 - I laid out a 15 degree angle with a protractor and then cut the block with a skill-saw.
This made two blocks - which I was going to glue/screw together, but the single block has been working out fine.
Here are a couple of pics -
Obviously, you need a tad bit of good Tennessee Whiskey to get a decent edge
...
Thanks nozh2002 and the rest of you for all the info I have read here.
best regards -
