Hi,
for all cases I need a high quality cut resistant
glove. I am a bleeder and wanna be safe as possible
when hiking in the bachcountry and working with my blade.

Chain Mail is the only thing I can think of that really works. The kevlar gloves cut fairly easily.

I'd say the best thing to do is learn how to use a knife properly. And carry some basic first aid items just in case.

Short of chain mail there is a type of nylon fiber glove that grocery stores use in their meat departments, etc. we preferred them for use with the bone in saw because if you knicked the chain mail glove with the bone in saw it would grab it and jerk you towards the blade. You might be able to find them at a kitchen supply store. Personally I would think a decent leather glove would do.

Invest in a good pair of these. They're the ultimate in cut-resistant hand wear.

In all seriousness, you REALLY want Hexarmor. They're pretty damn amazing and the absolute best thing on the market right now. Some of their gloves are even snake proof! They make extensive use of SuperFabric which I'm a huge fan of. I'm waiting for folks to start making shirts and stuff out of it. :D

I had not heard of hex armor. That stuff looks really cool

It looks like they have a jacket made out of the stuff as well.

I haven't either, but I'm liking that Hexarmor

How often do you cut yourself? Do you know how to handle a knife safely? Are you using a slip joint or fixed blade?

I had a pair of goat leather/Kevlar combo gloves that held up pretty well (I think they were made by Condor), even against drywall razor blades. I'd nick them every now and then, and they would cut, but my hands never took any damage underneath.
