Anybody have any impressions of their blade steel, or their handle designs, particularly of their kitchen knives?
 
My mother has a set of their kitchen knives that she's had for about 45 years. Their handle designs are strange looking but are actually pretty comfortable. I sharpened her knives not too long ago. The blades seemed quite hard and they got pretty sharp. I never had the opportunity to do much cutting with them.
 
The blade steel is 440A in case you're interested. That is a good all around kitchen knife steel. Basically, the Cutco knives are well made but very, very, very expensive for what they are because of the method of distribution. They are part of the same company that owns Kabar.
 
let me throw in a quick question, if cutco is 440A, what is the steel Henckels uses?
 
so what are some kitchen knives that ARE worth that price range? Kershaw? what is a really good kitchen set that is expensive but WORTH it?
 
My parents have also have a set of Cutco's they have been using for over 30 years and they are still in great shape. They are well made, very durable, and have an excellent guarantee.(you break it-they replace it, no questions asked-free lifetime sharpening) The drawback, as stated above, is that they are very expensive.

If you're looking for good, budget priced kitchen knives Dexter Russell or Forschner are both a good bang for the buck. You can look in most any restaurant kitchen or commercial fishing dock and you'll likely find one of these knives.

For something more expensive I would recommend Global Knives. The thin blades get incredibly sharp and hold their edge quite well. They're very comfortable in the hand and not slippery as one would think an all-stainless knife would be. I absolutely love my Global knives.
 
what about shun cutlery? they are as expensive as cutco even on the internet stores....anybody know anything about these kitchen blades?
 
I have two problems with them.

1) They are incredibly expensive.

2) Their salespeople tell customers that "you never have to sharpen these knives". It was a regular, non-serrated, butcher knife.

Probably he was one exception, but I take exception to them filling the minds of the uneducated (my mother) with nonsense.

I agree, Biogon, their sales presentation is a bit of a dog & pony show. Of course the people selling them (usually college kids) are as uneducated about knives as the people they are selling to.

I've been to many Cutco presentations over the years (wife teaches high school) and I've heard some pretty good ones... One of the best was a little girl telling us how a lady had picked up one of her old wooden handled kitchen knife and heard an odd rattle in the handle - It turns out that rattle was (*supposedly*) from cocroach eggs that had been laid inside the wooden handle. Of course that couldn't happen with Cutcos since the handles were made of a solid space-age thermo resin material. I was laughing out loud until my wife kicked me under the table. :D :D
 
Painless, Cutco would have you believe that 'more is better', with their huge blocks and sets. Most kitchen tasks can be accomplished perfectly well with my three-piece set of Shuns. I'm not saying those are the only knives in my kitchen (I love blades way too much to limit myself:D ), but if they were, I'd be perfectly happy.

I have a buddy that sells Cutco stuff, so i could get it for cheap i guess. I dont have a ton of interest in them. An Eriksson #748 could probably do just as good as a similarly sized cutco knife, and at a fraction of the cost.
 
I have a brother and and brother in law that used to sell those. They both have some of the knives. My favorite thing they sell is the really nice scissors. These really work great and I've used the crap out of mine for years. Hey and they'll still cut a penny in half too! :D

The Shun's are what I use. and they have been nothing sort of exceptional. Where were you looking online? I bought them at a local cutlery shop which is usually more expensive than online retailers, and they still didn't cost nearly as much as a Cutco blade.

i am a professional chef and i use a small cutco paring knife which i have had for years my parents have4 a full set but i feel that (after using countless wustofs and henckles ... sabatiers and f. dicks ... ) the best kithchen knife for the money is a global ... nice and light and they get frighteningly sharp
