Hello!

I am completely new to the world of kitchen cutlery and a family member has requested a new steak knife set. Any suggestions?

They have also requested a long non-serrated knife ( ~10" blade) for large hunks of meat, as well as other various large foods. They already have a Cutco set, but they're looking for something different.

Sounds like they're looking for a butcher's knife/scimitar...

What's the price range??? Check out Wüstof Pro, Messermeister, Dexter Russell, or Victorinox for good ones in a lower price range...

As for steak knives, so many to choose, again, price range? Are you looking for natural wood, all metal, or a durable a synthetic handle? Something traditional or something more modern looking?

I have a set of all steel J.A. Hencklels that I quite like.

I haven't set a price range, since I don't even know what's out there. Henkels keeps coming up from a lot of sources though. Really, I'm just looking for reputable brands, since I've seen that Chicago Cutlery seems to have gone downhill.

The Same brands i mentioned above, they are all reputable mid level big production brands that make different lines of Knives for different budgets, but even their lower end stuff will far more often then not be better then most off brand/store brand/big box store - made in china, ? type stuffs...
They all make steak knives as well, just in case you want to find matching steak knives and butcher's knife.

FWIW, my next set of kitchen Knives will be a full matching set, (steak knives to block set), probably next Christmas as a house gift, will most likely be a nicer set of Henckels, Wüstoff, or Messermeister... I'm far from Rich, but on a budget, in the mid range production level stuff, I do I like what they offer...
I am partial to German made though due to strong German heritage.

Victorinox with rosewood handles are on my list as well...

A lot of higher end stuff out there too, but it's gonna cost more... Sometimes a bunch... Shun has some basic stuff as well, mid to upper level stuff, but a great Cutlery company overall, and believe it or not, Tramontina makes decent, budget friendly Knives.

It might be more expensive but the knives will probably be much better than Hencklels or Wustoff. Look in the Exchange section and go to For Sale: Kitchen Knives. You can find hand made knives made out of the best steels with the best heat treat for a reasonable price. Support your local knife maker!!!

Add a 10 inch rosewood scimitar to that pack and most people would be happy.

Well, since you asked, they are arguably not as good in design or materials as a $40 plastic handled Victrorinox chefs knife, yet they are priced almost as high as what you can get a Zwilling Henckels Bob Kramer Essentials 8 inch chefs knife for. Cutco is not a knife company although it is owned by a knife company. It is a multi level marketing company.
I wonder why

Thank you for your feedback but I am a loyal employee of Vector Marketing. If you didn't know, Cutco has been a company since 1949.
