Case. Go Yellow or Amber Bone, and they have a few offerings in their Bonestag. Cold Steel's traditionals are in CV as well.
 
Seems to me I've seen that they are both 1095 carbon, with vanadium added. But, the percentages (of Vanadium) may not be EXACTLY the same...pretty close though, I'd bet. Heat treat might make a difference, of course.
I could be mistaken...I am getting older...sigh.

OK, upon reflection...I'm not sure if Carbon V contains any Chromium...but I think CV from Case sure sounds like it!

"Carbon V" and Case CV are both 0-176C chrome vanadium steel, which is the trade name for 50-100B. (I've looked this up on many websites, since I was curious what they were also.)
 
Cool, the reason I was suprised is I have never seen Cold Steel (Camillus) Carbon V develop that nice gray patina that Case CV is famous for.
 
Might be a different heat treatment. I've seen some strange things with 1095 blades- OTs will stain looking at them, while my old Marbles is more resistant.
 
The finish could conceivably have something to do with it as well.

Especially since the Case's have a much more polished look to them. I think most of the Cold Steel knives are satin finshed or just BB.
 
CV and Carbon V are trade names. The composition can and has changed. From what I've read, noone really knows what the composition is at any one time except the factory. Someone about 5 years or more ago had CarbonV tested and said the composition mactched 50-100B, but of course that can change. All cold steel says is that they buy their steel in batches and it's tested to meet their specifications. They've never said the "V" means Vanadium, or the Roman Numeral for 5 (e.g. forumalation #5). Case however does say their steel has vanadium. Vanadium doped steel was the "super steel" of many years ago, kind of like S30V is now.
 
It's similar to how Victorinox draws from multiple steel makers. There are, I think, three, and the steel varies slightly with each.
