Damn Chef's Choice Electric Sharpener

First post. Been lurking a while and feel like I know many of you already. Got into knives recently. It was brought on by my scratching the heck out of of my SAKs and kitchen knives on the electric sharpener. After much reading I invested in the DMT DuoSharps (extra coarse, coarse, fine, extra fine), the Spyderco Ultrafine, and a black Arkansas ultrafine, and a Stropman compact strop. I couldn't be happier. Knives are all sharp. Getting the mirror edge down. My desire for practice resulted in buying a Tenacious, Chicago, and CRK small 21. So it begins... Living the dream!

Now my problem is how do I get all the scratches out of the knives I ran through the Chef's Choice? Is there hope or are they ruined forever?

I use fine grit sand paper from Autozone and the likes for polishing metal. Micromesh also works, and does good on wood and plastic too. Clear up your foggy headlights while you're at it.
 
If you felt like investing $400 bucks into a Wicked Edge Sharpening System I believe that would go a lot further to help you out. The Wicked Edge also holds the angle of the sharpening too so that you can't screw it up.. You still have to choose the correct angle though. As far as I know its the best system available. I sure like mine anyway.

You could use the course stones and they would remove about anything. Including your blade if you're not careful.. But it should fix about whatever is ailing your blade.
