I got some old GIGANTIC hocho (kitchen/butcher knives) for 20$ at a thrift store here.
I wanted to send them to you to see if you could clean up the rust.
You can keep the one you like the most...
(they have 12 inch blades, 1/2 inch thick...)

They look like the top one, but the flat of the blade is black and they are very very big.. (in this pic you only see the flat grind side, which is all silver) The top one is an unagi hocho and I have cleaned it up myself. I love it.)

Pretty neat knives....love the shallow "hollow" grind on the backside. Very interesting! :thumbup:
 
yes it is. i assumed that it was flat when i started sharpening my unagi hocho, only to discoved that the "flat" is hollow ground. I am assuming that means that the flat side is not mean to be sharpened at all?
I had to do some reshaping, really, t ofix some notches and a messed up point, but yeah, these knives were made with all kinds of flat and curved surfaces you dont see very often in modern blades.
 
I've just recently been advised of such a grind, and yes, the backside is meant to be unsharpened (single edge).

What's the plan?

I think I can certainly clean 'em up and sharpen them. When you leaving?
 
Well, I was hoping you'd be happy with this deal: Clean them up and sharpen them, keep the one you like and send the other back to me in Texas. I'll be going back Sep 30th.

There was some deep pitting in a couple spots that went through the blade. So...the edge is "toothy" in some spots. Ok with me....I don't mind. Just wanted to be upfront.


Other than that...went well.

I put a fine scotchbrite finish on the backside, removing the rust...but leaving the pitting (for character...:D ).

For the front side, I put a hollow grind on with a 14" wheel, finished out to 400 grit. You can definitely see both a hamon line as well as the lamination (the blades are clearly laminated - high carbon core, mild steel on each side).

And these puppies are sharp! :eek:


You would have no problem going through a finger on the cutting board with one of these...they're heavy enough you wouldn't even notice...until you went to pick your nose, of course. :D :p

I got to see that Unagi Hacho in person at a Gun Show not too long ago.I met Danny there to show off some stuff and just hang out.

Awsome knife!
I can only imagine how cool the other blades are.
