I picked up one of these at the local Goodwill the other day for about 8 bucks. It's supposedly made in Denmark. Anyone know the steel on this one? Any luck that it is 12C27?

Dansk kitchen knife

Did some research on google. It is a Dansk Torun cheese knife. I doubt it is made out of any high performance steel. Dansk design inc seems to make only silverware, salad "servers" and fancy cheese/cake knives. None of those require steels with high edge retention. Besides, if they used anything above average they would advertise it. Instead they say "matte stainless steel". They seem to care more for fancy shapes.
