From what i understand, one of the supposed "downsides" of H-1 steel is that it doesn't take a scary-sharp edge, and it doesn't hold that edge....
i'd like to dispute the first "downside", i've dilligently sharpened and stropped my Pacific Salt to a scary-sharp, hair popping edge, it's been holding that edge fine so far, but today, at lunch, the Pac. amazed me in a number of ways....
i had ordered a toasted Reuben on sourdough bread for lunch, when i got back to work with this delicious, overstuffed sandwich of meaty, sauerkrauty goodness <drool> it was clear i had two options in order to eat it;
1; dislocate my jaw and hope for the best
2; cut it in half with my PE Pac. Salt
as a card-carrying Knifeknut, i chose option 2, as it would be the first real-world test of the Pacific
generally, serrated edges are preferred for cutting breads and meats and such, but the Pacific sailed right through the sandwich like it wasn't there, no squishing, sawing, or compressing of the bread, test 1 passed, the knife emerged from the sandwich triumphantly coated with Thousand Island dressing and other sandwich juices

i then took it into the bathroom to clean it, i ran it under tap water to rinse the bulk of the sandwich innards off it (mmmm....sandwich innards....), then grabbed a paper towel and bunched it up, and drew the knife through it, blade up, spine towards my palm a couple times to get the stuff off it
i went back to my desk to eat, after a few minutes, i felt a slight stinging in my left index finger, i looked at it....
the Pacific had *shaved* off a crescent shaped flap of skin about 1/4" long, and 1/8" wide at it's thickest point, and a couple MM thick (thank Og for calluses...
), there was no blood, it didn't cut beyond the second epidermal layer, it *shaved* a slice of skin off my fingertip and i didn't even feel the cut until the sandwich juices got into the cut while i was eating, talk about surgical precision....
bear in mind, in order to cut my finger, it had to cut through a couple layers of wadded up paper towels to do so, now *that's* a sharp knife....
i'm really starting to *love* H-1, sharpens up quick and easy, totally rustproof, and takes a *killer* edge to boot....
