I recently made this dedicated choil grinder using a 3600RPM single phase motor and a custom made arbor which accepts 1.25" ID surface grinding wheels. I dressed the fine wheel on my SG first, then installed on the grinder and finished dressed it while mounted. This works significantly better than the methods I used to use for final finish grinding the choil on folders.

Here are a few pics with the guard on and off.

I saw the idea from a fellow slipjoint maker.

I use a triangle file to file the choil in pre-HT on slipjoints, then I forget to put choil in before HT, then use a carbide mill for a half round choil post HT. I don't do nearly enough slipjoints to need a dedicated choil grinder like you've got setup, but it sure would work good.
