Had this knife sitting in the drawer for sometime because I was never too crazy about the thick edge profile of this knife from the factory. Seeing all those beautiful regrinds from Mr Krein inspired me to regrind my ZDP Delica.

I gave it a full flat grind and then convexed and polished out the edge. It is roughly about .012 behind the edge. It is a slicing and dicing demon with that thin edge. This new edge can now split hair and push cut paper with very little effort.

ZDP-189 is a pain to grind because it is so darn hard and wear resistant. I think I will send my next ZDP knife to Mr Krein

Looks great!

I would bet it will find its way in your pocket more often now.

Looks very good. I tried to regrind an S30V Native on my HF 1x30 with disastrous results. You pros must use good quality belt grinders with good belts that are wider than 1":D

My ZDP Endura sure could use a regrind, but I'm not even going to think about doing it myself.

Great job! I also got a little bit dissapointed with the thick edge profiles of my Delica 4 and Endura 4. Somehow I thought they might be better slicers but I find myself reaching for my Opinel 10 (carbon steel) more often when doing food prep. They are great knives though, I can tell you that. They are rugged, will cut forever and sharpen pretty easyly (VG10). I just thought they would be better slicers... I might try a Cali or one of those Delica's that are flat grinded.

How do you guys like those convex edges on folders?

Mikel

I wish I have the skill to do a regrind on all my knives, what did you use btw?
