Design Copyrights, What defines infringement?

I am looking into making knives full time and could use some of your great advice on this subject. There are so many great designs out there how do I keep from infringing on the design copyrights or patents? There are so many upstarts like me and talented newcomers I'M sure who have the same question in the back of their mind. I would appreciate your input on this subject.
