Hello. I have a few dexter fillet knife knives that have taken a beating. Not sure but was told dexter knives are sharpened on a 20deg angle . Some of These knives need to be reprofiled . . So , what are some user friendly tools to reprofile and sharpen ? Worksharp tools?
I have one of there mk2 tool and knife sharpener. Not to impressed as it's not keeping angle like it should . The one side cuts more than the other .
Trying to send it back to them ..
Thought about the work sharp precision adjust any advice or thoughts are appreciated

Dexter knives use pretty thin and soft steel. should be easily re-profiled. A Sharpmaker with CBN or diamond rods are quick, simple, and work well for the Dexters. Gets them razor sharp quickly.

Those are working knives, yes? I just use 2 flat bench stones for those, a very rough to establish the angle, and a smooth to refine the edge, and finish on a leather strop imbued with green polishing compound; gets me from blunt to hair popping sharp in less than 10 minutes.
