Dexter-Russell I-Cut line?

Not that line, but i do have Dexter-Russell kitchen knives & love them all. Mine are the sani-safe series. Made in America & an excellent product.

I have both the I-Cut and the plain sanisafe white handled restaurant style. Out of the two I would go with the regular white knives. The I-cut is more style than performance.
If you haven't dropped the money yet, I highly suggest you look in to Forschner first!

Thanks. We have 3 Vic/Forshner knives: 2 paring knives and a smaller chef knife. The rest are from a horrible serrated Henkels block set. I don't usually cook but last weekend I made a Valentine's day meal (on Sunday, but it still counts :p). I went through 3 knives until I found one that actual cut raw chicken. Roasted red pepper, ham, and some sort of goat cheese rolled in thin cuts of chicken breast. It tasted great.

Nah - the knives I was tried first were the Henckels Eversharp with "micro serrations". These actually: http://www.amazon.com/Henckels-Inte...?s=home-garden&ie=UTF8&qid=1298038533&sr=1-16

Unless I sharpened the serrations off the blades, they aren't going to get any sharper. The edge looks like this:
