Have a look at DMT bench hones. I've been using them for over a decade -- maybe close to two -- and haven't worn one out yet. I have the red and green bench hones, and DMT Diafolds in extra-coarse and coarse.
I would go with DMT Diasharps, heard nothing put good things about them , and they fit in the edge pro too, dunno if your strictly a freehander or not, but having the option to freehand, then put the diasharps in the edge pro and get more precise results , is just cool.
+1 for the DMT hones. If choosing only three, I'd pick the 'Coarse' (325 mesh/45 micron), 'Fine' (600 mesh/25 micron) and 'Extra-Fine' (1200 mesh/9 micron). Those will handle about 99.9% of anything you choose to do, if used intelligently (good technique, knowing how different steels respond to them is key).
I have a double-sided 6" DMT DiaSharp that works well and was quite inexpensive. For 3.5" blades the 6" stones are enough.
Bigger would be better though, no doubt. The 8" stones seem popular but they aren't cheap.
