What edge does the 600 grit give? Is it good for making a new edge or should I go with a more corse grit?

I think it is good for a new edge, but if I had the money, I would get a 220 also. Just for those times I beat the hell out of the edge.
The edge I get from the 600 is easily polished with a 1000/4000 water stone. I think it's a good middle of the road grit for removing material (chips, rolls, etc.), while providing a very adequate chopping edge.

I hope this all makes sense. I'm packing out to go camping as we post. (It's pourin' down out there. Thank God for tarps.)

If you want a cheaper option you can look at the double sided 8" DMT's - you can get all 4 grits by buying 2 of these. I got mine on ebay for under $60 each.

DMT also makes one with a section of solid plate on one end of the stone - it's less than ideal to do real fine work (knife tip) on the perforated plates.
