Diamond Steels

Years ago I had 2 different field steels ( Buck Honemaster and Schrade Honesteel) Chromium Boride and Chromium Carbide respectively. They both left very sharp and smooth edges.I just wondered if I could duplicate that with a DMT Extra Fine Steel?Both of them have been lost to time.
 
If memory serves, their EF is their 'polishing' grit and it might not be coarse enough if the blades get too dull...

If you can get one that's fine on one side and Extra fine on the other, you might be better off.
 
I really just want something to restore that peak sharpness between a stone sharpening.

That should work fine, with the DMT EF. The EF isn't quite to 'polishing' grit; it'll leave a very fine, toothy, 'satin' finish, and I'd bet you'll like it. Diamond 'steels' tend to work faster for a given grit, because the narrow contact area will focus pressure against the edge (keep it light; no need to press hard on these); and the extra length helps with working speed as well (assuming rods up to 8"-12" length, as these typically are).
