Differential Heat treat.

How do you differentially heat treat a turkey. Should you use a hot oil quench. I'm looking for a rockwell of 2 or 3. Thanks in advance.

I had a co-worker who made "differentially heat treated" chocolate truffles. One half of the ball of chocolate was dipped in melted white chocolate. The other half was dipped in powdered cocoa. I am guessing they were RC 0.1 or less, straight from the fridge. Once warmed to room temperature, they were probably something like RC 0.01. Yum!

The only meat I can differentially heat treat is steak! Sorry no no pointers here for turkey. Oil quench sounds good though, maybe a food grade oil like peanut, safflower etc. ;) :) Happy Thanksgiving everyone! -Matt-
 
uh uh Motor Oil, the way to go, the left over stuff is fine, don't worry about it!

The used motor oil quench definitely was the right choice except we couldn't tell the light from the dark meat.
 
They cooked the turkey too long so it was overdone !! In metallurgical terms the precipitation had gone beyond the cohesive state thus losing strength - it then falls apart when carving !!

Well, this year they cooked the bird pretty well.

... maybe 70 durometer or so.
