DIP - (Dinner in progress) Roccastle Inspired Chilli

Happy sunday, Beckerheads, Becker fans, and other forumites! That's Right! It's Sunday Chili season over here in my kitchen, and this time; It's Buckcastle Chili !!!
Chili on Sunday is a bit of a tradition in my family, and few things say "It's Autumn, now." Like a good bowl of red on a Sunday afternoon. And what better way to celebrate a little cool weather down time at home with a spin on a Beckerhead favorite, one Ethan seems to enjoy sharing with us: MacLeid's Roccastle Chili (with Venison for meat.)

First off, we have the stars of the show: Bacon, Buck, and Becker

Worked up some yellow onions with my BK-5

Caramelized them in bacon grease and deglazed

Added to tomatoes with cracked black peppercorn and a little chili powder

A big pot of chilli sure does sound good. I'm headed out hunting and its 16 degrees and would love to have some waiting on me when I get home. Luckily I made beef stew the other day, so I'll at least have that. Might just have to do some chilli next week.

Not quite, the simmer's the secret.

A big pot of chilli sure does sound good. I'm headed out hunting and its 16 degrees and would love to have some waiting on me when I get home. Luckily I made beef stew the other day, so I'll at least have that. Might just have to do some chilli next week.

sounds like some fine chili / stew weather indeed. Good luck on the hunt!
 
All done and eating now. My 16 looked a little lonely, so I threw it a cameo:

I'm assuming "to right" means "can clear out an elevator in 3 seconds flat."
 
Mmm, looks like the perfect anti-turkey leftover meal... gonna head off to the pantry to check out the bean supply.

Hey Guyon, a tablespoon or two of vinegar in the chili will rob it of its elevator clearing power, counter the vinegar flavor with a T or 2 of brown sugar, and a little more chili powder... any excuse to add more chili powder is always worth trying.

Thrown in a side of garlic bread and... dang it, I've got to head for the kitchen.

thats some fine chili there thought i smelled something good wafting along hwy 460 earlier today lol!

Well done, great thread! Looks really tasty. Think I'm gonna add chili to this weeks meal plan now.
 
Looks muy excellente. Time for more chili in our house, as well. I just need to pick up a stout to deglaze the pan and see what all that fuss is about.
 
If this is as good as it looks, it's fine fare indeed. Some cornbread, a campfire and some Black & Tan.........

Agree with Trade - needs some cornbread or a nice hunk of fresh sourdough. or it could be IN the sourdough... aw yeah.

Absolutely. Chili in sourdough is something a man could live on for a loooong time and be very happy.
