Do you accomplish them while you are grinding bevels, before or after bevel work?
Going to try my hand at some kitchen and fillet knifes. Looking for ways to do them effectively.

Probably the surest way to keep them even and straight is to mark the taper out on the spine and edge, then grind it in before you do the bevels.

That said, depending on the bevel, a distal taper may develop as you grind it. This works especially well on a full flat grind.

i have done them by hand while grinding bevels, and also put the taper on the stock with a surface grinder before doing the bevels. either way make sure to scribe a center line on the spine so you can check by eye or calipers to judge how far off you are.

Both work. I do the distal when grinding the bevels on most knives, but do the distal first on large knives and swords.
