Yes, they can. Use light pressure and let the diamonds do the work.

I guess it can...but has never happened to me and I've used one in the kitchen for a couple years now. *shrug*

Maybe if the temptation is too strong to resist, you might need to go to a benchstone first, to clean up the edge (reprofile).

The DMT Diafold works best with moderated pressure ending it light brushes, then moving to the higher grit and repeat.


What grit combo do you have?

I have the fine/extra fine (red/green)
 
The stones do wear in a bit as well, which IMO many people mistake for diamonds falling off. I have sharpened knives literally thousands of times in the last 10-15 years with a 2" fine, med and coarse DMT and the stones still work fine, even if they do not feel the same as they did new.
