When I use this whetstone I get really rough/deep scratches on the edge once finished. I also have the coarse, fine, and extra fine whetstones. My question is after I use the XX-coarse stone how much sharpening do I need to do on the other stones to smooth it out and how many strokes should I be doing for each side of the edge? I don't care about a polished edge I just want it to feel semi-smooth at least. Btw I use steels between AUS-8 and S30V for the most part.

You can go directly from the XXC to the C in my experience. I only take enough time to raise a burr on both sides with the C after switching to it. This seems to convert the scratch pattern just fine. If it doesn't, you can certainly spent a bit more time with it until it all looks like the C scratch pattern. I then switch to the EF and do the same thing.
