Do you always anneal the stock?

I know you do on old files or O2 steel (or at least I think you're supposed to.) But do you always anneal the steel you get from say a knife supply store?

yes, no, maybe.

It depends a lot on the stock, and the supplier. Most places I buy from I know one way or another.

If it says annealed (like cold rolled annealed, or CRA) then you are generally safe. If it's 15N20 it's almost certainly NOT annealed. Best thing is to ask the supplier.
 
Thank God, everything I get in now todays is pickled and annealed. Not like the old days. What a PITA!

As said most all steels you get from the knife supply houses is already annealed,
