Do you guys oil your kitchen knives? how often?

Hello, all.
Whenever I use the good kitchen knives (Hoffritz) I always feel the need to oil the things. I'm afraid water will get in between the cracks of the handle/blade junction. I use a couple CS kitchen knives too, but I don't feel the need to oil them; I just dry them off really well. I'm curious as what you guys do? (and gals, too!)

Never! Except for the very worn looking Chinese meat cleaver all others are stainless. I just wash and dry them and they' re good to go.

Seriously, my Henckels four star knives get by just fine without oiling. Were I to oil a kitchen knife, I would use mineral oil.

Tom; why don't you make the little woman a set of Talonite (r) kitchen knives; then her lack of maintainence wouldn't matter!

Before Professional Chef's (in Ca.)had to switch to Stainless knives by the health dept. they used Carbon steel and they just used any cooking oil in the kitchen...Olive oil works great!..its edible, washes off and you apply new oil.....
