This question is not so much which method is better?

But to get a feel for what members of this forum enjoy more, batoning wood with a knife or splitting it with a hatchet

Depends on what tool I have with me. I enjoy using both tools. Sometimes I feel that I have more control with my knife, but it goes faster with a hatchet.

I love to baton!! It is just fun to me, I carry a big chopper so I don't see a need to carry a hatchet or axe. Even at home I enjoy spliting with a knife.

For ease of making lots of firewood, I prefer to use a saw with hand axe. But, when I head into the woods to practice my skills and keep them sharp, I might decide to take anything from a small folding knife to a larger survival knife, in order to accomplish the same chores. Each requiring me to modify my techniques to best meet the challenge.

Depends on the size of the stuff.

If I can push the blade down thru it and split it the knife.

If it's big enough I have to pound on the blade the hatchet.

I like to use an axe if I am doing larger pieces, but I go to the knife when I am making kindling.

Batonning is fun!

It depends on the conditions for me. Let me expand on that statement.

Last week I was camping and everything was wet, several days of rain. I cut down several dead standing birch trees with a folding saw. They were about 5-6" in diameter.

I found that with everything being very wet and it being dark out, it was easier and in my opinion much safer to split them using my Koster Survivor, 9.5" A2 blade. I had my Wetterlings Large Hunter but chose not to use it.

During daylight hours I split the same wood with the axe. Just my observations for what it is worth.

Yes! I do prefer to split wood with a hatchet or a knife. Either of them work better than rocks, for the most part.

Seriously, it depends on what kind of wood and, obviously, which one I'm carrying at the time. For anything up to 4 inches, my BK-2 does an outstanding job.

I could never split enough wood with a knife to keep my house warm for the winter. I prefer a splitting maul or hydraulic splitter.

I prefer a hatchet or an axe myself.Knives, I believe, were created for cutting
I'm weird. On the other hand, I prefer to cut a steak with a steak knife instead of a machete.

I'm definitely in the axe category, although recently I'd been needing to split down full sized logs to kindling size to fit in our backyard fire pit and a knife is really good for that (usually use either my outcast or BK7). But when I headed out for 2 nights camping I took my pack axe. I really love the intermediate sized axes.

Hatchet or axe. For me, I baton only if there is no other choice. My knives are not splitting wedges, but slicers. Nice to know some of them can do that if needed, but I am big on having the right tool for the job if at all possible.
