My first poll, lets see if it works :)

Do you sharpen your knives yourself or do you have someone do it for you?
 
I used to send mine back to the manufacturer for resharpening...until I bought an EdgePro! :)

My dad had allways made me sharpen my knives since I was 9. On the farm we allways had tons of Dexter butcher knives lying around(toolboxes,drawers.gloveboxes,ect) I was lucky to pick up the knack of getting the angle right, and getting my blades sharp. Now I want to learn how to strop them the right way to get them even sharper!

I never thought of that. I don't have any customs knives :(

I bet there are others that do the same. I would have to think twice about sharpening a custom myself.
 
I sharpened a knife once...(1972 I think). I then cut myself with it so I just keep 'em all dull now....

I sharpen all of my blades, and the blades of others too. I love learning about sharpening; different steels, different stones, flat bevels, convex bevels, to strop or not to strop, and the list goes on! Still grabbing a stone and sharpening a knife that way connects me with the past. Hand sharpening is one of those skills that seem lost to many out there.
 
the thought of owning a knife and NOT being able to sharpen it?

I'd be ashamed to even consider myself a "Knife Knut" if I couldn't sharpen ANY of my knives.

This is not directed at someone who collects customs and does not use them. A collector has no need to sharpen such a knife. But anyone who owns a knife should be ABLE to sharpen it.
 
I'm a collector. Just as a collector of paintings would faint at the thought of someone, "brightening up the colors" on a Monet, or "just doing a little touch-up" on a Picasso, I don't sharpen collectible knives be they custom or production, sharp or dull.

But, I'm also a knife user. So, yes, I do sharpen my own users. I'm not one of these obcessive sharpening nuts who wants a knive sharp enough to split atoms. But, I do like an edge that's both practically sharp and durable enough that I don't have to sharpen it after every use. I've found that achieving that practical edge isn't that difficult.
 
Chuck, from your experience, what is best angle for 440C or AUS8A given they are properly treated, so that it is quite sharp but not so thin that every time we use, we need to steel / strop first and do again upon finish using?

Thinking of my PC International (440C) and CS 29 LT (AUS8A) ...

Tom, I think I am not the only one confused with your posting here .. although those who know you might not even ask "do you sharpen your knives?";)
 
yes, even my own emersons, imho some of the more difficult, as much as i love them........

Every single one of them, and some for other people too. I have quite a few different systems, but my favorite (if I have the time to use it) is my Edge Pro. It's also the only one that I'll use on my Boa since it's got that tricky recurve. It does leave a nice even bevel though.
 
Yes. Production and customs. I sometimes think, after re-profiling and sharpening a custom, that I could have/should have sent it back to the maker to have it done, because then it would look nicer, but I'm too obsessive for that. If I decide that I'm not happy with the edge on a knife, I have to sharpen it.
