I know it is a very specialized tool, but with all the knife collectors on the forums, I figure there has to be some Jimador spade thingy afficionados out there.

I was not aware of how they harvest agaves until I saw it on TV a couple of weeks ago, and I think it is cool, except I would not want to be out there in the hot sun all day doing it myself.

The jimador carries a little file and he can sharpen that thing up in no time, and cut that agave away from the roots and etc.

It is called a coa. I used to work as a bartender until recently, and in 2010 a spirits company took us a trip in Mexico in Guadalajara, Jalisco. I saw this tool from upclose, and although it is sharp enough, I would categorize it in garden tools rather than a knife. Fascinating design though.

Yup--definitely an agricultural tool in a similar class as digging bars and ice chippers etc. Very well designed for their particular use. Were you planning on harvesting agave with it, or a different task entirely?

Nope, just wondered if anyone else here had seen them, because I think they are neat -- perfect tools for the work that they do.

Plus I do like a good tequila.
