Does anyone make nonstainless carbon steel kitchen knives?

Just as the title says, does anyone still make non stainless carbon steel kitchen knives. Specifically I'm looking for an 8in chefs without a full bolster.
 
+1 on the Old Hickory knives.

Roselli also makes some carbon (even high carbon) kitchen knives
 
Checkout the goodwill type stores. Most of the kitchen knives are junk, but once and awhile you find a real gem for 50 cents. Try several, and if they aren't any good, give em back and considere the 50 cents a donation.

they make japanese laminated high carbon blades, i believe they even have an Iron blade on there...hidatool are quite decent, i been meaning to order another woodworking folding knife (laminated high carbon) from them.

Some as cheap as $30 :)
 
As A.L. mentions, Roselli make rather impressive carbon steel kitchen knives. I have their little cook and their long santoku. They also offer a very hard carbon steel blade in their quite expensive Astrid series, but I don't have one of them.
The blades of mine are around 3mm thick which is actually a bit much for kitchen work.

Here's another interesting option: Herder. This is the Solingen based company behind the classic "windmill" knives. Well, not only these compact windmill knives exist in carbon steel, but also a number of their bigger ones. These are always thin, and they are remarkable slicers.

Finally Opinel offers a small set of kitchen knives (incl a peeler) in carbon steel for the connoisseur. These are really good despite the humble appearance.
 
With the exception of Old Hickorys and Japanese knives, the selection of new carbon steel kitchen knives is pretty abysmal. You can probably get some vintage blades at Ebay if you look.
 
K Sabatier makes some wonderful French style Chef and other kitchen knives.

Their outlet store is in South Carolina. First class quality forged carbon steel, and very good prices. I have a number of them.

+1 on the Opinels as well. Mine are paring knives and came in a two-pack for around $8.

They're very, very sharp and patina quite nicely.
 
If you go on Ebay and type in carbon steel knife you will get into some new but mostly used Sabatiers, Henkels, Dexter Russells and other carbon steel chefs knives.
 
And a whole lot of Japanese knife makers. Not only non-stainless steel, but also super thin, super hard. Just the way most of the kitchen (and light cutting) knives should be ;)
 
Old Hickory has stayed on the market all these years for a reason: excellent value for the price and American made to boot.

They also make great starting points if you like to customize knives and practice your grinding skills.
