Im taking a ladys most used kitchen knife pattern and making a few knives in honor of a lost loved one. At first I was all for this shape knife simply because Ive never made a clip point but something eating at me now is..............

In the Kitchen what good is a raised point like this one? I dont want to change the pattern for the project but I need some basic blade shape insight. Why?? Or does it even really matter anyways :)

I think the best reason for making that type of clipped point on a kitchen paring knife is to make it look like a mini Bowie knife so that the husband will use it. ;-)

Now to be serious.

I'm trying to think about when I depend upon the point when cooking. Poking holes in the plastic over the TV dinner before putting it in the microwave,... cleaning dirt from under my fingernails,...

OK, NOW I'll be serious,

When carving vegetables and fruits into decorations a small pointed knife is essential.
Sometimes you make cuts in a ham and place cloves in them when baking it.
A similar thing can be done with a beef roast and garlic.

I can't think of much else that I couldn't do with a blunt pointed paring knife blade, which is what I use mostly.

Brian,

I sounds like the design has been pre-determined by the lady and the circumstances. And, I think you are right that it really doesn't matter. But, I don't think that knife is any pointier than a typical paring knife and the clip point looks off for the kitchen to me.

I use a fine point parer all the time for capping strawberries, peeling grapes, cutting out bad eyes in potatoes before peeling. Just out of curiosity, what make is the original you are copying? If they also made "sporting" knives, this size and shape was popular in the 40's up to ~70's. The same pattern may have been used on thinner steel and the grind changed to reduce tooling expenses.

It's a cheaper aluminum handled knife. Really thin steel.

I think I'll make another with the point less turned up fir my own satisfaction :)

Brian first your one heck of a maker!Second this thred made me smile i was going through our knife draws here this weekend and found this sweet little 7" paring knife made by regent sword, it has a swedge, its rt handed had a prominent spot for your thumb lightning bolts etched down the blade, like lonepine said i was drouling, and my wife was giving me crooked eyebrow look... its now in the block on the counter! Regardless theyll be a beautiful set of knives! GHaile

I couldn't help it. I had to cut a few with a Sheeps foot / wharnyish edge profile.

I want to make another with less curve on the tip and then add a clip point to it :)

Heck Yeah!! Come to Blade and stop by. I got my knife making seed planting while I lived in Portland Oregon a couple years :)

My start was actually watching part of The Hunted being filmed :)
Then I moved back to NC and fell into trying to make a knife or 2 :)
