Dozier are designed for hunting cores (skinning), and are among the best (if not the best) in that trade. They are from pretty hard D2, narrowly ground, which makes then very sharp with long edge holding; but somewhat prone to chipping: won't replace an axe/saw for bones. They are semi-stainless.

Fallkniven S1 is very robust and sturdy knife, with convexe bevel. It's made of laminated 420/VG10/420, with 5mm spine. Stainless, good edge holding (but not as good as Dozier), pretty sharp, unbreakable on normal tasks. But the way it's ground makes it an average to poor working blade for "precision tasks" (including skinning, cleaning game...). While sturdy, knife is still pretty light, don't expect chopping too much with it.

If you are a skilled/professional user, want a top-class hunter knife, and/or plan to do a lot of skinning, game preparing, you should choose Dozier. If you are rather a casual user or/and want an allrounder, you'd rather get S1, which will perform most tasks pretty well (but will be somewhat awkward to use ).

Maybe you should consider H1 too, which is marketed as an hunting knife.
