Could the Dremel Multi with polishing wheel and Jeweller's Rouge be effective in removing small scratches caused by sharpening? Can it be done at all? Opinions wanted...!

Jeweler's rouge does not have much, if any, abrasive effect. More for a final polish. Tripoli might work. Both of these are more for art metals like bronze, silver, gold, etc. than steel. The dremel would work fine, but find an abrasive meant for steel.:)

The problem with using something like a dremel to polish is that if you do not go over the whole surface with even presure, you'll end up with "shiny streaks" that don't quite match the rest of the finish. At least, that's what happened to me on an old Opinel folder. On the other hand, I've buffed an edge or two with a dremel, and that leaves a nice polish.

Yes, the Dremel can be used.
I recently customized my CRKT Apache
blade and hardware to a high gloss finish.
First I used 400 grit sandpaper to remove
the bb finish, then the Dremel & felt
wheel with some E5-Emery buffing compound
to remove all scratches. It worked great!
All the scatches are gone :D .

I bought a Dremel clone called Ferm, and went ahead polishing with Autosol. The surface went at least from worse to bad. The next day, I continued the exercise, and the surface went from bad to ok. One has to pay attention to the pressure applied to the blade, as well as keeping an even speed across the blade.
As a side effect, the blade had to be resharpened, and now the surface is acceptable and the edge is excellent. The scratches are still there, but much less apparent.
I must say that the Razor Edge sharpening guides works wonders for me.
