So I have a bunch of knives that I have worn down the tips of, is there any reason I should not use a dremmel to try to take out some of the steel along the spine and resharpen the tip?

Provided of course, that I go slow enough and take breaks to make sure it doesnt overheat and ruin the heat treat.

I was just wondering if there was any adverse effect of the vibration or something.

I'd re-profile and sharpen the edge up into the tip to restore them. Better results imo.

do what pierced said and if the tip sticks up above the frame just take some metal off the kick which will lower the tip.

Do what Richard said, smart.
The "kick", you may know, is the flat spot at the base of the blade that contacts the frame when it folds closed.
