If I want to use a 2.5 hp treadmill motor that does nearly 7K revs, what size wheel would be best for that kind of speed from a mc60?

Everybody has a different preference for belt speed, I would say the range is somewhere from 3,500-6,000 ft/min. With a 4" wheel, the rpm are roughly equal to the speed in ft/min (π4"≅1ft).

I have no personal experience with treadmill motors, but every time I have seen them discussed for grinder use I came away with the conclusion that they are not well suited for this purpose. YMMV.

With 2.5 inch wheel you will get 23 m/s or 4600 SFPM .That is lowest speed I use for heavy grinding .Many knife maker use slower speed then that .
 
Just be aware that a 2.5HP 120VAC wall plug tread mill motor is not the same as a 2.5HP TEFC grinder motor. The power rating is not a true value (unless it draws around 18 amps).
Also, it won't last long as a grinder motor due to the type of frame.
A 2.5HP grinder motor would need 220VAC power supply.

If you go with the treadmill motor to make a VS grinder, you will want a 3" to 4" drive wheel to get the normal range of speeds.
 
Forget treadmill motors

Use a NEMA framed industrial induction motor with standard mounting C face
